Magical Unicorn Meringues!

What better way to enjoy a special day than with a spot of baking?

In honour of #NationalUnicornDay I’ve whipped up some unicorn meringues for elevenses and – just for fun – here’s how!

Ingredients

All you’ll need is:
4 medium eggs – white part only
175g caster sugar
1 tsp vanilla extract
An oven heated to 145 degrees
A flat baking tray with baking paper on it
Lots of whisking
Icing, sprinkles and food colouring to decorate

Mallow-y goodness

Pop the egg whites in a large bowl and whisk them until they form still peaks. Gradually whisk in the sugar until you have a white and glossy meringue mix, and then gently whisk in the vanilla extract.

If you want flavoured meringues, swirl in the flavouring at this stage. Don’t stir it too much so that it’s all mixed in, just a little to create a ripple effect. Mine have strawberry flavouring in them.

Swirls

Prep a flat over tray with some baking paper. If you’re a skilled baker and have all the paraphernalia, pipe the mix into swirly shapes. If you’re not (like me), spoon it onto the tray and swirl it up with a spoon.

Bake them at 140 degrees for about 1hour 15 minutes.

Slightly overbaked

I overbaked mine, so they shouldn’t be as golden as they are here… oops. Check on them regularly as the time reaches an end to avoid such mishaps.

Once they’re out, cool them on a wire wrack and then apply as much unicorn-themed icing as you can. The more colourful and glittery, the better.

Yum!

Once the icing has set, prepare yourself a cup of tea (or beverage of your choice) and sit back.
